The diverse and inspired menu at Amity & Commerce was developed by Chef de Cuisine Justin Houghtaling and his talented culinary team: Stefan Kauth, Executive Chef and Executive Pastry Chef Claus Olsen.
Chef de Cuisine Justin Houghtaling took his culinary skills and ambition to the Mandarin Oriental Washington DC, where he started as a Sous Chef and quickly climbed the ranks after years of training alongside celebrated DC Chefs. He was mentored by award-winning chefs like Robert Wiedmaier, Brian McBride, John Critchley, Joe Palma, and Tim Ma, among others.

I personally love when a restaurant offers this. Seeing the activity and efforts that go into creating your selections in the kitchen is quite impressive!
